The harvested lemon balm fills a basket. Isn't it pretty? The leaves are such a bright green and I love their coarsely toothed and textured finish. Because nature isn't always free of bugs and other little critters, I always take the time to wash them in a sink full of cool water. A salad spinner works nicely for removing the excess moisture and then they are ready to dry.
