Rice Baked with Apples and Lavender

4 large sour apples
1/2 cup raisins
4 Tbsp. brown sugar
2 Tbsp. butter*
3 cups cooked rice
1/4 tsp. lavender

Sour cream** and sugar for serving.

Preheat oven to 350 degrees F. Butter one bread loaf pan. Peel and grate the apples on a large-eyed grater. Combine with lavender, raisins, and 2 Tbsp. of sugar. Pat 1 cup of cooked rice into the bottom of the pan. Spread 1/2 of the apple-raisin mixture evenly over the rice. Spread the next cup of rice over that layer. Top with the remaining apple-raisin mixture. Finish with another layer of rice. Dot the top rice layer with thin slices of butter and sprinkle with 2 Tbsp. of sugar. Seal with aluminum foil and bake for 1 hour.

Serve hot, scooping out all layers. Top with sour cream and sugar to taste.

*May substitute Earth Balance for butter

**May use vegan Tofutti sour cream as a replacement.
