Pumpkin Foamy

My loves pumpkin! I can safely say that more than one pumpkin pie is made in our home during the autumn months. Even the boys have been known to whip up a pumpkin pie for themselves when they feel like having this comfort food hits. Sometimes the craving for a spicy pumpkin treat strikes when there simply isn't time for baking. During those times, a pumpkin smoothie hits the spot perfectly. Today Rylan craved a smoothie for dessert, and it took only minutes to whip one up in the blender. Here's the recipe for you: Pumpkin Foamy 1 cup vanilla flavored almond or soy milk 1 medium banana, broken into pieces 1/2 cup solid-pack pumpkin a dash of two of cinnamon or pumpkin pie spice 2 Tbsp. maple syrup 4 ice cubes (optional if frozen banana is used) Place all ingredients except ice cubes in a blender. Whiz until very smooth. Add ice cubes and blend again until all ice is crushed. Serves 2 *Today I added the sweet herb, stevia, for sweetning instead of maple syrup. I also doubled the amount of pumpkin. Go for what tastes good to you.

  2. I hope you enjoy it, Salina! My kids love it and I love how it gives great Vit A and other nutrition. Sometimes I use stevia rather than maple syrup for the sweetener and it's really good as well. Let me know how it turns out. Be generous with the pumpkin spices. :)
