Corn Cakes

1 cup cornmeal
2 1/2 tsp. baking powder
1 cup soymilk
1 tsp. olive oil
6 oz. tofu, firm, diced
1/3 cup green or red peppers, chopped
1/2 cup corn
1 green onion, sliced

Combine all ingredients, blending well. Add olive oil to a skillet and heat until very hot. Create patties by dropping corn cake mixture by 1/4-cupfuls into skillet. Brown for about 2 minutes and then turn to other side. Delicious with soy cream cheese and fresh salsa.
