Bean Salad

Bean Salad is usually considered a summer dish, but I find that I prepare it most in the autumn and winter months. I think it's because garden greens are so abundant in the summer, and bean salad is something that can be made directly out of the pantry. My recipe is simple, and I love it that way!

1 can each: kidney beans, garbanzo beans, green beans, and yellow wax beans, drained
1 sweet onion, diced
1 clove garlic, crushed
2 - 3 Tbsp. pimento, diced
1 Tbsp. Italian Seasoning
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt to taste
juice of one lemon
1/3 cup fresh parsley, coarsely chopped

Mix all ingredients together gently in a bowl. Garnish with parsley clusters. Serve and enjoy.
