Autumn, the Time for Haystacks

Haystacks in autumn bring thoughts of barns, piles of hay, and a sweet fragrance. But if you we are talking about food, haystacks have a different meaning. Haystacks are a classic vegetarian one-dish meal that is frequently the main course for week-end potlucks and family get-togethers. There are probably as many variations for this recipe as there are cooks; all taste great, but some versions have more calories than others. My version is the 'low cal vegan' version. Layers of brown rice or corn chips; pinto beans seasoned with salt, garlic, and cumin; shredded lettuce; tomatoes; olives; pickles; onions; and salsa. Yum! Fast and easy! Other versions include melty cheese made from cashews, pimentos, and seasonings (or shredded cheeses). Avocados, ranch dressing, catsup, and other toppings also help create a haystack that matches your favorite flavor needs.
