Beets and Baby Greens Salad with Ruby Raspberry Dressing


1 beet, fresh*
4 c. baby salad greens
1/2 cucumber, sliced
1/4 c. onion, chopped
1/2 c. walnuts, coarsely chopped

Peel and grate the beet on the coarse side of a grater. Toss the greens, onion, and cucumber together and create a bed of greens on individual salad plates. Top with th grated beets and walnuts. Drizzle with Ruby Raspberry Dressing. This makes a beautiful presentation and is high in nutritional qualities.

For the dressing:

1/4 c. white grape raspberry juice concentrate
1/4 c. lemon juice
2 Tbsp. flax seed oil
2 Tbsp. olive oil
1 tsp. Herbamare (seasoning)
1 tsp. Instant ClearJel

Place all ingredients except the Instant Clear Jel in a blender. Whiz together until well blended and then slowly sprinkle in the Instant Clear Jel while blender is running on medium speed.

*fresh beets can be messy! If you'd prefer, use grated, canned beets.

    Hi, I've been wishing for a raspberry dressing. I'm going to have to try this one. How about putting a few raspberries from the freezer into the dressing to for some texture?
