Golden Crackers
1/3 cup sweet rice flour
1/3 cup sorghum flour
1/3 cup quinoa flakes
1 Tbsp. flax seeds, ground
1 tsp. cornmeal
1/2 tsp. salt
1/4 tsp. baking powder
1/2 tsp. sweet stevia powder
2 Tbsp. olive oil
1/4 cup water, plus 1 - 2 Tbsp. if needed
Mix all dry ingredients together until well blended. Add olive oil and stir until dry mixture is well coated. Add water slowly and mix until dough forms. Add water in small amounts if needed. Use hands to form into a ball. Flatten dough and place on a prepared baking sheet or baking stone. Roll to about 1/8" thick. Score with pizza cutter, creating diamond shapes. Sprinkle top with a topping of choice (olive oil, cornmeal, poppy seeds, coconut, etc.). Bake in preheated, 375 degree oven until golden, about 15 minutes. Remove from heat. Cool and enjoy.
*Use a total of one cup of flour for this recipe. Other flours of choice may be used in any combination.
