Is that the corn custard??? It looks divine. Here's another recipe of yours I will try.
Hi Becca,Yes, it's the corn custard. Enjoy it! Watch it carefully as it bakes --- with this recipe, variable oven temps make a difference. It will be jiggly on the top because of the added milk that wasn't stirred in. And that's okay. . .Let me know how it turns out for you! Thanks for visiting my blog.
Oh it was lovely. We had it for breakfast. You are right about watching it as it cooks, though. I cooked it a leetle too long and it wasn't quite jiggly. I would have liked it better the same texture as the photo. I must add, we topped it with honey and butter. My DH said it tasted just like pancakes!
Becca, I'm so glad the recipe turned out! Next time it will be even better! If you aren't getting it jiggly enough, don't be afraid to add the 2 cups of soymilk on the top. It seems too much, but turns out quite well. I used to bake it in a skillet, but for some reason have switched to a casserole dish. I think the skillet works better. :) Thanks for trying my recipe.
