Carob Caramel Candy

Carob Carmel Candy

1 cup coconut
1/2 cup carob powder
1 cup soymilk powder
1 tsp. vanilla
3/4 cup honey or alternative sweetener
2 Tbsp. Earth Balance margarine
1 tsp. orange rind, grated
1/8 tsp. salt
1 cup nuts, finely chopped

Mix all ingredients, except nuts, together in bowl.  Spread 1/2 cup of nuts in the bottom of a pan.  Add the carob mixture and spread over the nuts.  Press firmly.  Sprinkle the remaining nuts over the top.  Pat down.  Chill and cut into squares.  Wrap individually.

Makes:  24 carmels


  1. Those sound delicious. I have everything but soymilk powder...regular dry milk powder? I'll check my sources.

  2. Just curious--what brand of soy milk powder have you used with these? I know some types are sweeter than others.....

  4. Susan, I usually use the Better Than Milk brand of soy milk powder. I agree --- some are a lot sweeter than others.

  5. Vee, you can use regular non-fat dry milk if you like.
