Spring Rhubarb

Rhubarb Sauce

4 cups rhubarb, cut into 1-inch lengths
3/4 cup grape juice concentrate
1 1/2 cups apple juice concentrate, divided
1/2 cup dates

Bring 1/2 cup of apple juice and dates to a boil. Remove from heat and allow dates to soften. Then, blend until smooth.

Cook rhubarb with 3/4 cup grape juice concentrate and 1 cup apple juice concentrate until rhubarb is tender. Stir in the apple juice/date blend and cook 3 minutes more, bringing to a gentle simmer.

Delicious rhubarb sauce! The acidity of the rhubarb is dominant and the date and juice flavors are not apparent.

*Strawberries may be added in season. Mash gently and stir in after cooking.

  1. wish we could grow rhubarb here. It just doesn't seem to like the climate. Great recipe and will look for some in the store so I can try it
