Cumin-Garbanzo Salad

1 can garbanzo beans, drained
Juice from one fresh lemon
1/4 cup olive oil
1 tsp. cumin, crushed seeds
3 - 4 green onions, sliced
1 small tomato, chopped
dash of salt, to taste

Gently crush garbanzo beans (do not mash). Add remaining ingredients and stir gently. Serve on a bed of lettuce greens with fresh parsley for garnish. Delicious!
